Check back often for more of my favorite "clean eats" recipes! Some of them are my recipes, but honestly, I'm not that creative so I find recipes from some of my favorite whole foods/clean eats sites, test them out and share my favorite ones with you!

My Moma's Almond Date Bars (these are good for breakfast, a snack, or dessert!)
    1 c chopped dried dates
    1 1/4 c oatmeal ( NOT instant)
    2 tbs coconut flour
    1 tbs ground GOLDEN flax seeds
    1/2 c sliced thinly sliced almonds
    1/2 tsp salt
    1/2 heaping tsp cinnamon
    1/4 c almond butter
    1/4 olive oil
    1/4 c honey
    1/2 tsp almond extract (heaping not scant)
    1/4 c  RAW sunflower seeds
    1/4 c RAW pumpkin seeds
    1/4c dark choc chips (mini if you can find them - if not, chop regular dark in half)

If you can't find coconut flour or GOLDEN flax seeds you can use barley flour - 3 tbs total
    preheat 350 oven
    line 8x8x2" pan with parchment paper allowing paper to go up 2 sides so you can pull it out of the pan in one piece
    stir together dates, oats, flour, flax, (or barley flour), almonds, salt, cinnamon in large bowl
    in a separate bowl whisk together almond butter, olive oil, honey & almond extract until smooth
    pour wet ingredients into dry, add seeds and chocolate, stir until dry is evenly coated
    spread mixture into pan firmly pressing into bottom, edges & corners to ensure it is molded into shape of pan
    bake 20-25 minutes until brown around edges & a little color on top
    don't try to cut until you cool overnight in fridge
    pull out the sling when completely cooled
    cut with a big serrated knife into 16 squares

*Make sure to keep refrigerated. They will fall apart otherwise.

*If you have trouble finding the golden flax meal, ask someone at your grocery store for help. A lot of places are starting to carry healthy alternatives to flour. Sometimes, coconut flour can be hard to track down. If you have a Whole Foods - lucky you! - you should be able find everything there. Your best bet is a health food store, that way you only have to make one stop. Grab some almond flour while you're there. I have a lot of recipes coming up that require it.
